Poke bowl with shrimp and edamame beans

Pokéis the Hawaiian version of sushi where you typically serve raw fish with cooked rice and veg. Prawns have been used here, but they can easily be replaced with salmon, tuna or other seafood. Rice can be replaced with noodles and you can also make a Poké bowl with the vegetables you have in the fridge. Poké is thus great "leftover food", where you can have a healthy and easy meal with very few ingredients.
